Doinks Burger Joint

Smash burger restaurant, Waterloo Arts District

About the organization

Doinks Burger Joint is a smash burger restaurant in Cleveland's Waterloo Arts District in Collinwood. It began as a pandemic pop-up run by chef Bonn Rassavong, who had cooked at Lola Bistro and Citizen Pie, and Peter Brown, owner of Six Shooter Coffee. They first sold burgers out of Rassavong's garage and under a rented tent, taking orders through Instagram messages, then tested the idea at The Wine Spot and The Cleveland Brewery.

Doinks opened its own restaurant in the Gold Building on Waterloo Road in July 2023. The OG burger stacks two 2.5-ounce patties with a special sauce, alongside specialty burgers like a banh mi burger, house-made hard seltzers on tap and a full bar.
